>Change Of Command Reception Menu

>On Friday, my Soldier had his Change of Command. The change of command is followed by a short reception for people to mingle. This being our third change of command, you would think it gets easier.

Big Fat Nope on that one.

One, it’s been almost two years since I have cooked for a crowd. Two, I found out on Tuesday (as in four days prior to the event). Three, my Soldier couldn’t give the faintest idea how many people were going to be there.

Grrrrreat.

This violates every guide to entertaining ever conceived.

After much angst and pulling of hair, I decided on this menu:

Fruit Tray
Vegetable Tray (Celery, Broccoli, Cauliflower, Carrots)
Deli Tray (meats, cheeses, and crackers)
Raspberry Swirl Cheesecake Squares
Chocolate Swirl Cheesecake Squares
Original Cheesecake Squares
Chocolate Raspberry Cookies
Lemonade Cookies

I wanted finger foods that people could pick up and walk around with. I also wanted foods that could be made ahead. I always try to use combo ingredients- so two dishes share ingredients. There were a few changes as we went. My chocolate swirl cheesecake turned into chocolate chip cheesecake- which turned out really well and I will make again- on purpose this time.
