>I made this up after seeing a Brussels Sprout Stir Fry recipe in a cookbook. The commissary frequently has pork cutlets for very cheap (less that $2/lb) so I’ve been looking for more ways to include them in our Paleo diet.
This was fabulous. I’m going to play with the seasonings and experiment, but it was very good. ArmyMan said it should be a weekly thing. Costing about $2 a person, that’s very doable.
Pork and Brussels Sprouts Stir Fry
1 lb Pork Cutlets, thinly sliced
1 lb Brussels Sprouts, fresh or thawed fresh frozen
5 slices bacon
1/2 yellow onion
- Fry bacon and remove from pan.
- Add pork cutlets(seasoned with salt and pepper) to the pan and fry in the bacon grease, remove from pan when browned and slice lengthwise.
- Quarter brussels sprouts and add to pan. Saute until just tender. Add back pork and crumble bacon into pan. Season with salt and pepper to taste.
