>Reflecting on this whole Paleo thing

>I actually bought a “diet” book at Borders tonight. I’m a little bothered by it.

It’s Loren Cordain’s The Paleo Diet. I’ve been reading his website for a while, and he was a part of quite a bit of the research I was able to find. I decided it might be worth it to have some of the information handily available without having to dig through a website. And I like books.

But it still felt like I was buying one of those New Year’s resolution, fad diet books.

In reality, I’m pretty satisfied with eating this way. I miss pasta. {well, actually I miss Pasta dishes more than pasta}  But, I’m generally full without finishing what’s on my plate. I don’t find myself wanting dessert. I’m losing weight.

The food we’re eating is good. It just requires a mental shift in the way that I do my grocery shopping and menu planning. But it’s working. And for now, I’m okay with that.

Tonight’s dinner was Slow Cooker Italian Roast Beef.

Slow Cooker Italian Roast Beef

Ingredients:
 4 lb Roast ( I used eye of round)
1 onion, julienned
1/2 cup beef broth
1 tsp each: oregano, parsley, basil, garlic powder
Salt and Pepper 

Method:

  1.  Spread onion slices evenly on the bottom of the slow cooker. 
  2. Trim excess fat from roast and place on top of onions. 
  3. Season roast with herbs, salt and pepper. Rotate roast to ensure even distribution. 
  4. Add broth. 
  5. Cook on low for 4-5 hours, the longer it cooks, the more tender it is.

  1. >I'm really hesitant to buy recipe books anymore. It seems like I spend the money but only get, like, 5 recipes out of the book that I use.
