Authentic, In the Kitchen, Recipe

>Veggie Latkes


1 large yellow squash
2 carrots
1/2 yellow onion
1 egg
2 tbsp tapioca flour
Salt, Pepper, Parsley, Garlic Powder, to taste
4 tbsp olive oil


  1. Trim and grate squash, carrots and onion. 
  2. Season with salt, pepper, parsley, and garlic powder. Mix well and let sit for 10 minutes
  3. Add egg and flour and combine.
  4. Heat olive oil  in a deep pan and drop in veggie mix in large tablespoonfuls. Fry until crisp and flip. 

{This made a wonderful side dish and I’m planning to try it again with different vegetables. We hate it for breakfast with eggs but it would be equally good with dinner.}
