I ended up spending all day today at home since Monkey was in a sleepy mood and we had the threat of severe weather hanging around. Since I was hanging around the house, I figured I might as well cross some things off my to do list.

One of my favorite parts of around-the-house days is making my own marinara. I’ve been playing with my recipe and searching through other recipes trying to find one I like. We’re hoping for generous tomato plants this year so I’m hoping to can tomato sauce made from our tomato plants. 🙂 I decided to do a trial run today with the canning using the “water-bath” method.

From Scratch Tomato Sauce



{Ingredients}
2 cans tomato sauce
1 can peeled whole tomatoes
4 cloves garlic, peeled
1/2 medium onion
1/4 tsp black pepper
1 tsp basil
1 TBSP parsley
1/4 tsp cinammon
1 tsp chili powder
1 bay leaf
5 tbsp butter
2 tbsp olive oil

{Method}

  1. Heat stockpot over medium heat, adding butter and olive oil. Brown the intact 1/2 onion. 
  2. Once onion is browned, add all other ingredients. Bring sauce to a gentle boil.
  3. Turn sauce down to a slow simmer and cover for two hours, stirring occasionally. 
  4. Uncover and simmer for 2 and half more hours, still stirring periodically. 
  5. Remove onion and puree with immersion blender. 

{I happen to think that tomato sauce tastes best if you let it cool and sit overnight in the fridge, then serve it the next night 🙂 You can tweak just about everything in this sauce. When I have it, I like to use fresh basil. It brings a brightness to the sauce that you just can’t replicate with dried herbs.}

I left my comfort zone in Texas and moved to Florida to start my new life with my hubs. It's definitely a different way of life, but I wouldn't trade it for anything because of the lessons I'm learning through it. Anyway…glad to have found your site!
