>Corned Beef and Cabbage Recipe

>I decided to play with my recipe this year and do something a little different on St Patrick’s Day. My personal favorite Irish dish is a good Irish Stew with fresh soda bread. But ArmyMan has to have his corned beef and cabbage 🙂

3 lb brisket
2 bay leaves
2 tsp black peppercorns
4 whole Allspice berries
2 whole cloves
1/2 large green cabbage, cut into 8 wedges
1 lb baby carrots


  1. Preheat oven to 300 degrees
  2. Rinse beef in colander under cold running water.
  3. Place brisket in large dutch oven.
  4. Combine seasonings in spice bag and add to dutch oven.
  5. Add garlic, cabbage, and carrots to oven and cover with water.
  6. Cover tightly and braise in oven for 3 hours and 45 minutes. 

{We really enjoyed this version. My one issue with corned beef and cabbage is usually the texture of boiled cabbage. By braising, the cabbage retained more textured and had a lovely roasted flavor. ArmyMan liked it so much he asked if I could do the dish once a month or so.}
